Apple Cinnamon Bread

A couple years ago, my friend and I made this UNREAL Apple Cinnamon Bread. It’s been two years and we are STILL talking about this dang bread! It’s kind of like an Apple Pie… but in bread form. It’s too good.

Bread Ingredients:

  1. 2 cups of all purpose flour (or gluten free flour)
  2. 2 over ripe bananas, mashed
  3. 1/2 cup of maple syrup
  4. 1 tsp vanilla
  5. 1/2 cup coconut oil (melted)
  6. 1 tsp baking soda
  7. 1 tsp baking powder
  8. 2 eggs

Middle Cinnamon Layer:

  1. 1/2 cup coconut sugar
  2. 3 Tbs melted coconut oil
  3. 1 1/2 tsp cinnamon

Topping:

  1. 1/4 cup coconut sugar
  2. 1 tbs melted coconut oil
  3. 1 tsp cinnamon
  4. 1 cup of finely chopped apples

Instructions:

  1. Preheat oven of 350F
  2. Combine flour and baking powder/baking soda in a bowl
  3. Add mashed bananas, honey, oil, and vanilla. Stir.
  4. Whisk two eggs, and add into the bowl
  5. Fold in the dry ingredients into the wet ingredients
  6. Pour half the batter into a loaf pan (coat with spray or use parchment paper)
  7. Sprinkle half of the middle cinnamon/sugar layer on the first half of the batter
  8. Pour remaining half of the batter on top
  9. Add apples to cinnamon sugar mixture and then add to the top of the bread
  10. Bake in the oven for 40-44 minutes. Test it with a toothpick, sometimes when I make this it will be completely raw in the middle and I have to leave it in the oven for a little longer!
