Sweet Potato Pancakes

5-INGREDIENT SWEET POTATO PANCAKES… This might be my fluffiest stack of healthy pancakes yet… Also someone stop me because it’s literally AUGUST and I am already doing fall recipes. I saw a pumpkin at the grocery store the other day and I really almost bought it. Definitely wouldn’t mind some cooler running weather, fall outfits, and all things pumpkin spice…. 🎃 

#dEATS – 1 cup oats, 1 cup sweet potato (I microwaved mine for 3 minutes on each side), 1 egg, 1/4 cup maple syrup, 1/2 cup almond milk, 2 tsp baking powder, & 1 tsp cinnamon. Blend all ingredients in a blender on high speed. Spray a little cooking spray in a pan, I have non-stick and I still did just to be sure they wouldn’t stick! Make like normal pancakes & then top them with sugar free maple syrup, yogurt, honey, chocolate chips, fruit, peanut butter, etc. Honestly the pancakes are so good on their own you don’t even need toppings (but you always need toppings) 😉
