If you know me, you know my two favorite things are 1) Breakfast food and 2) Mexican food. I could honestly live on either of those and be perfectly content. That being said, I present to you my favorite recipe of all time- The Breakfast Quesadilla. The Breakfast Quesadilla can sometimes even moonlight as a Breakfast Taco if you only have smaller tortillas.

Now let’s taco bout (ha ha) the recipe…
Ingredients:
- 2 eggs
- 1/3 cup of egg whites (optional)
- Spinach
- Mozzarella or Vegan Cheese (I usually use Daiya)
- Tomato
- 1/2 Avocado
- Whole Wheat/GF Wrap
Directions:
Whisk 2 eggs & 1/3 egg whites (optional) together in a bowl. Pour mixed eggs into a pan over low heat. Stir consistently. When the eggs start to cook, add in spinach & cheese. Continue stirring until eggs are fully cooked & remove from heat. In another pan, spread 1 tsp of olive oil & heat the wrap until golden on one side and warm on the other. Then add mashed avo & the eggs!
